They go by the names 1893, nori nori, and Shadwood. Three decidedly different settings, brought together to bring new life to an events dining area and transform it into a premium food court. The three kitchens deliver a new form of culinary excellence in the same spirit that drives the Berceau des Sens, the EHL’s Michelin-starred restaurant.
On the opposite side of the hall, nori nori and Shadwood unfold, one after the other. The former is a highly popular sushi restaurant, its unique nature brought out by hanging kokedama – moss balls that grow plants in the air without pots – and origami-inspired lamps that help give the space structure. A laundry area has been added, and the service area transformed into an open Japanese kitchen. The custom-designed tables are paired with Kata chairs by Arper.
Meanwhile, Shadwood presents EHL’s vegetarian option. Equipped with an entirely new kitchen, the restaurant features oak arbours flanking the grand staircase that allow a blend of wild and tended greenery to flourish, giving the impression of natural woodland. For the seating, we chose Leaf chairs, again from Arper. This subtle detail enhances the feeling of being immersed in a near-natural environment, where oak structures evoke tree trunks, table legs resemble climbing roots, and the chairs rest like fallen leaves on the forest floor.
